Serves 2 (generously)

  • 2 salmon fillets (250g in total) – ideally wild, sustainable.
  • 2 spring onions trimmed
  • 100g watercress
  • 1 avocado
  • 5tsp lime juice
  • 1tsp apple cider vinegar
  • 1 x 15ml extra virgin olive oil or rapeseed oil
  • 3 x 15ml pumpkin seeds
  • Sea salt to taste

Put the salmon fillets in a frying pan and cover with cold water. Add the spring onions (whole), peppercorns and squeeze in the lime juice and sprinkle in some salt and bring to the boil uncovered. When the water is bubbling turn the fillets over, then remove from the pan and leave to cool for 7minutes. Then take out the fillets and leave to cool completely – this could take up to an hour.

While the salmon is cooling, make a start on the salad. Toast the pumpkin seeds in a dry heavy based frying pan on the hob. It doesn’t take long to toast them, they’ll start jumping a little out of the pan. Transfer to a cold plate.

Put the watercress into a bowl, sprinkle with the vinegar and toss the leaves. Add the salmon removing the skin and tearing up the flesh into bite-sized pieces.

Halve the avocado, remove the stone, then spoon the flesh onto the salmon and watercress. Drizzle the oil and sprinkle with salt and the toasted pumpkin seed, gently mix together and split between two plates.
